I learned how to make Pakora at the weekend! It aint as hard as it looks!... im really impressed with myself. At aged 23, its one of my greatest achievements. lol Maybe I'll try my hand at making a pot of rice next weekend.... though, i have never ever succeeded at that. people say its easy, but my rice always ends up soggy, or stuck to the bottom of the pan. Is anyone here a good cook.... and got any hints on how i can learn to make some easy interesting dishes (not handis full of chicken curry.... got mum there to do that for me!) what would be most appreciated though is if someone could tell me how to get the freaking stink of onions, ginger and garlic out of my finger tips that comes from chopping them in prep for cooking.... and no, handwash aint enough. its enough to put you off cooking for life if you ask me.....

i can make rice-but with a rice cooker of corse. just 4 cups of rice, 4 cups of water, switch it on, cme back in half an hour and voila. good aint it-n taste delicious. n it even keeps the rice warm after its cooked it.
thats the only fing i can make-my mum taught me before she went bangladesh. o n i can make cakes, biscuits n tings that i learnt to make at school. lol. damn even ma bro is a better cook than me.

You know anissa, if your going to worry about getting smelly fingers after cutting onions and garlic, you'll never learn to cook the real way! Try cutting fish especially mokha maas and pealing prawns - these smells are really difficult to get rid of! There is one thing I do avoid doing with my hands is mixing fish with haldi for biran and mixing tandoori chicken in its marinate. Your hands will turn into a bright yellow or a bright red. I use a wooden spoon which doesnt break the fish.
The only way you will learn to cook is by spending time with your Mum in the kitchen. You take over and tell your Mum to tell you what to do and when to add which moshla. After a few sessions do it on your own without supervision and you'll pick it up before you know it!Believe me anissa, practise makes perfect! I never knew how to cook anything until I got married. I had to learn it the hard way. I just assumed and kept phoning ppl up asking questions and thats how I picked it up. I think I am a really good cook now and am very confident about it. I love to learn new dishes all the time and surprise ppl with it. i havnt mastered all the dishes bengalis know how to cook, but I'm getting there! |

You know I have a tip for ginger and garlic which is VERY handy for ppl like me who has a crazy baby o look after and have to work aswell.
Grind the ginger and garlic seperately in a chopper (try not to use water cos it destroys the flavour). Make small balls out of it the size you would use for cooking. Freeze it and then take it out when you need to cook and bung it in the oil! It saves a heck of a time its unbelievable! I sometimes peel a few onions togeher and put in in the fridge - saves peeling time when I am about to cook next. Also wash and cut corriander and leave in the fridge lasts a few days and saves time. Also chop onions and soften in a pan with some water and salt and leave in the fridge for a few days and that helps speeden up the starting of fish curries. I do allsorts with my fridge freezer to help me speed my cooking up, and I dont listen to what people say about ohh the taste is gotten rid of - cos it doesnt! |
