Most bengalis are forgetting how to cook like a bengali and focusing on mostly on Indian cuisine ![]() I don't blame them, because there are differences in Indian and Bengali cuisine, there are less spices and herbs used in Indian cuisine and more on Bengali cuisine... If you guys want to try any recipes, here is one you can try and tell me how it came out: ![]() (Black Sticky Rice with Coconut Cream) **Prep time: 15 minutes, Plus 4 hours for soaking** **Cooking time: 1 hour** **Ingredients** 2 cups black sticky rice 2 and a quarter cups cold water 1 can unsweetended coconut milk, well shaken two-thirds cup granulated sugar half teaspoon salt half cup palm sugar or brown sugar half cup toasted unsweetened shaved or shredde3d coconut or half cup chopped roasted peanuts, for garnish 8 sprigs fresh mint leaves, for garnish Combine rice and cold water in a 2 and a quarter quart saucepanand let stand for at least 4 hours or as long as overnight Bring the rice and the soaking water to a boil over high heat, stirring to loosen the grains from the pan bottom. Continue cooking until all the water is absorbed for 4 minutes Cover, reduce heat to low, and cook until the grains are chewy to the bite 40 minutes, depending on how long the rice was soaked in water, remove from the heat and let stand, without stirring, for at least 10 minutes In a saucepan over high heat, combine half of the coconut milk, the granulated sugar, and the salt Bring to a boil, stirring frequently, then pour into a large mixing bowl Add two-thirds of the cooked rice and stir gently to combine Continue adding rice just until there is no longer enough coconut milk to coat the grains In a small saucepan over high heat, combine the remaining coconut milk and the palm or brown sugar and cook stirring frequently until reduced to a thick cream about 5 minutes Divide the rice among 8 bowls Spoon the thick cream over the rice and sprinkle with coconut or peanuts Garnish with mint sprigs and serve... tell me how it is if you want more recipes, i have them... |
