Buying shona

Why is it, (and i hope some of the young ladies out there might be able to help me with this one), that when you go to buy gold (shona)yeah, you ask for the price, the lady behind the counter weighs the chain, earrings, rings or whatever, then does this super fast calculation on the calculator that often leaves you gobsmacked.I know about the VAT, making charge etc but are they jus ripping people off????
